This is probably one of the simplest things you can make, but “oh! so delicious!” All you need is:
- Carrots (the colorful carrots make for a great presentation! I got mine from Trader Joe’s $1.99, for a pack of 17 carrots!)
- Olive oil
- Salt and pepper (to taste)
- Garlic (optional)
- Parmesan cheese (optional)
- 10 mins for prep and 30 mins for cooking
- Parchment paper
Wash and cut the carrots in halves. Lay them out evenly on parchment paper on top of a baking sheet.
Mix olive oil, salt, pepper, garlic and spread on top of the carrots.
Preheat the oven to 400 degrees.
Put the carrots into the oven for 25 minutes. Broil for another 5 minutes. Turn the oven off. Add some parmesan cheese and put the carrots back into the oven for 5 minutes so the cheese can melt a little. And voila!
Add some kale and serve it as a meal!
Or add some Brussel sprouts, mashed potatoes, chicken, and carrots on a side, and you’ve got yourself a king’s meal!
