Sunday is usually our cook day. We try to cook enough to have for dinner and then some to take for lunch at work during the week. Every Sunday we attempt to cook something new, but this weekend we put in a lot of muscle and sweat (thank goodness, no tears this time) into plastering and sanding the walls on the first floor, that I needed a tasty recipe that was quick. “Fish!”, I thought, fish is always tasty, quick and delicious! So we picked up 8 tilapia fillets from Costco and a bag of frozen stir fry veggies. Baked tilapia was on the menu tonight! The whole thing took me about 30 minutes to cook.
What I did:
Pour 1/3 of a small lemon juice bottle into a bowl
Squeeze one fresh lemon in there too
Pour about 2 table spoons of white wine (whatever you have laying around the house works)
Rinse tilapia and blot dry with paper towel, add to the bowl (stir it in there so the fillets soak up all the juices)
Melt 2-3 table spoons of regular butter in a small bowl in a microwave and pour it into the bowl with fish (stir the contents in the bowl again, I use hands as to not damage the fillets with utensils)
Line the baking sheet with foil, lay the tilapia on top and pour all the juices left in the bowl over the fillets
Sprinkle with oregano, paprika, black pepper and other spices to taste
Stick it in the 375 degree oven for 20 minutes (That’s it!)
There is not a real recipe for the stir fry. It would be better, of course, to use fresh veggies, but to cut a lot of time this was a great alternative! I used a mix of left over Classic Stir Fry and Orange sauces that I had in the fridge (and no, they were not expired yet!:))
And there you have it! Quick and delicious dinner in 30 minutes!
